Three Birds

New American cuisine in a lovingly restored mid-century modern building—the historic Parkmoor Drive-In, which won architectural awards when built by Rollin L. Rosser in the 1950s. The Idea Collective (owners of Sueño, Tender Mercy, and Dōzo downtown) purchased the former Carmel's Southwest space and opened Three Birds in June 2025. Chef Jorge Guzman (3-time James Beard finalist) oversees a menu of elevated comfort food: smash burgers (an homage to co-owner David Kittredge's Oklahoma roots), rotisserie chicken, corn dog shrimp, cacio e pepe, and steak frites. The 85-seat interior opens to a 90-seat patio anchored by "Lucille," a celebration maple named after Lucille Ball.
