Our Story

Co-owners Executive Chef Darin Mitchell and Dr. Shawn Osterholt opened in June 2019 in the historic Bushnell Building. Mitchell grew up in Springfield, graduated first in his class at Scottsdale Culinary Institute, then held chef positions at Urbana Country Club and Coco's Bistro in Dayton. Opening Stella Bleu marked the first time he worked less than 20 minutes from home. Self-described as 'casual, fine dining' with steak, seafood, and global influences—Italian, French, South American, Asian. Mitchell puts in 70+ hours a week. Survived COVID and emerged as a cornerstone of downtown Springfield's restaurant revival.
