Partners Brian Holton and Ian Luijk (a Dutch transplant and general contractor) opened Monnik in 2015 in the Schnitzelburg neighborhood, rooted in Holton's experience founding Beer Engine in Danville, KY. Brewer Buddy is now also an owner. The name means "monk" in Dutch, reflecting the focused craftsmanship behind their 20-tap beer program. But this is no brewery with an afterthought kitchen — Head Chef Jess Parker runs a full seasonal menu of creative comfort food built on locally sourced ingredients. Sauerbraten, war fries with peanut sauce, potted ham hock, curry beans, and daily specials rotate with the seasons. Event space upstairs.
