Founded March 2018 by Jeff Keate, Shane Spears, pitmaster Tom Martin, and Aaron Sharpe (who departed September 2025). Named for Lucius Quinctius Cincinnatus, the Roman statesman for whom Cincinnati was named. All meats sourced from neighborhood butcher Avril-Bleh and smoked low and slow over oak and cherry wood. Signature "Chitas" (chicken pita sandwiches) and handcrafted pies join pulled pork, brisket, ribs, and smoked wings. Modern-industrial space features free live music weekends. Counter service means fast turnaround even for large groups. Large catering orders require 24-hour notice; orders over $1,000 require 48-hour notice.
