Founded February 8, 1994 by Betty Peachey, who named it after her late father "Coldwater Joe" Peachey—from a small Pennsylvania valley where a creek ran past the family home. Her son Nick Hoover joined the kitchen staff in 1998 after culinary training at Sinclair Community College and the Culinary Institute of America. He became sole owner in 2011. The restaurant moved into a former Fifth Third bank building in 2008, with the vault converted into a dining room. Fireplace, full bar, sophisticated French-American menu in a small-town setting.
