Our Story

Owner Chad Druckenbroad got his start at 14 washing dishes at Derr Road Inn, was cooking on the sauté line within a year, then honed his skills at Five Loaves Café in Charleston, South Carolina—where they were doing gluten-free and vegan before it was cool. He returned to Springfield to run E.A.T. food truck for eight years before opening this brick-and-mortar in June 2022. Named 'Charlo's' after his three children: Charlotte, Madison, and Logan. American heritage cooking with sous vide techniques, local farm partnerships, and an attached market selling locally sourced meats, cheeses, honey, and hot sauces. Industrial-chic interior with exposed brick in downtown's Park at the 99 garage.
