Pan-Asian bistro in historic downtown Hamilton, occupying the former Ryan's Tavern space that helped kick off the city's downtown revival a decade earlier. The "1791" is a nod to the year Fort Hamilton was established. Co-owner Tony Ly—whose father Luong Ly serves as head chef—was approached by partners Steve Coon and Dave Jursik five years before opening; Ly says he grew "more and more impressed" with Hamilton's revitalization on each visit. The menu draws from Pacific and Southeast Asian traditions: Thai curries, pad thai, Vietnamese pho, fresh sushi, Szechuan dishes, and 23 different stir-fry options. For guests less familiar with Asian cuisine, continental options include steaks, salmon, and burgers. Full bar with an extensive wine, sake, and cocktail list. Second-floor banquet space for private events and celebrations. Weekend brunch available.
