Anko Sushi

A chef-driven sushi stall inside The Louisville StrEatery food hall in Beechmont, opened in early 2024 by owner and sushi chef Anh Le. After a decade at Hiko-A-Mon in Westport Village, Le brought his "old school" training and creative flair to a counter-service concept where guests watch every roll built to order. The menu features over three dozen rolls—including signature creations like the Muhammad Ali and the Beechmont—along with sashimi, poke bowls, and Louisville's only omakase experience using fish sourced from Japan's Tsukiji market.
